Our Cheese Bundles
The majority of our cheese comes from Lyburn Farm, situated on the northern edge of the New Forest, just a short distance away. This land is part of the Hamptworth estate and has been under the stewardship of the same family for more than 50 years. The farm produces award-winning cheeses from their pedigree herd of dairy cows. We have curated a selection box featuring our favorite cheeses from Lyburn Farm to provide you with a sampling of their exceptional offerings.
Layburn Gold 200g
It is ripened for about 8-12 weeks and has a creamy smooth texture with very small holes, eyes, to be seen evenly distributed throughout. In terms of a make, it is washed curd cheese, more continental, closer to a Gouda, but not typical. Technically it is hard cheese because it has been pressed, it is generally described as semi-hard because at 10 weeks it still has some movement in it, great for melting.
Lightly Oak Smoked 200g
This cheese is based on the Lyburn Gold, still a washed curd cheese but the eyes are not so prominent and is smoother, to give a light and delicate flavour. For those that enjoy a heavily smoked cheese, this may not suit. During the maturation process the rind goes a glorious caramel colour and can’t be mistaken for any other. Again, this cheese has won a wide array of awards including: 2019, 1 Star Gold at the Great Taste Awards in July & a Bronze Award at the World Cheese Awards in Italy.
Garlic & Nettle 200g
This cheese is made to the same recipe as the Lyburn Gold, but it is not matured for quite so long. As the name suggests, there is a hint of garlic and onion, and the other ingredients are paprika, ginger and horseradish, the nettle giving the cheese a touch of colour, that can be quite clearly seen. The garlic has however, not been included to such a level that it is too overpowering, and this presents a young well-balanced cheese that pleases most people.
Winchester 200g
This is an aged version of the Lyburn Gold to produce a cheese that is not a cheddar, but not a typical Gouda, you could argue it is somewhere between the two. This we have achieved, by small changes to the make and now maturing the cheese on to 8/9 months. This cheese still has an element of creaminess to it with a stubble nuttiness in flavour.
Old Winchester 200g
This is now a much dryer harder and crystalline cheese, becoming more reminiscent of an old gouda with a distinctive nuttiness in flavour. Because Old Winchester is made with vegetarian rennet, on several occasions the cheese is being sold and used as a vegetarian replacement for hard Italian cheese, and yet can still be used as table cheese, it has abit more versatility. Some might argue that this English farmhouse cheese. This cheese has also won several awards including in 2019 the Gold Award Artisan Cheese Awards at Melton Mowbray, Bronze Award at the British Cheese Awards at the Bath and West show, and a Gold Award at the International Cheese Awards in Nantwich Cheshire, and many more.

A Selection of 4x 200g pieces of Lyburn Cheese is available for £26.50 and this will include 1 x 150g box of cheese biscuits and 1 x 320g jar of spiced apple chutney.

Isle of White Cheese Co.
They started making cheese at the dairy in Queenbower in October 2006, with the aim to create a variety of small-scale handmade cheese for the various delis and restaurants on the Island. It was instant success with the awards rolling in shortly after! In November 2017 they completed on the purchases of Queen Bower Dairy where they produced the cheese to this day.
Isle of White Soft 200g
The Isle of Wright Soft is a soft white surface mould ripened pasteurised cheese first made in 2006. It fits nicely in between the brie and camembert brackets. It is sold between 2-4 weeks of age and has a maximum 9-week shelf life. When young this cheese has a firm textured, shard lactic flavour. As it ages the texture changes to a softer paste with the flavour becoming more familiar to the taste of camembert. Isle of Wright Soft proudly took the title of Reserve Champion at the 2019 British Cheese awards.

Isle of White Blue 180g
Frist made in 2006, this naturally rinded soft cheese is made with pasteurised milk. It is blue veined and is sold at 3-5 weeks of age. Being hand-made, the sizes have a minimum weight of 180g, but are approximately 210g, some slightly larger some slightly smaller. When the cheese is sold at 3-4 weeks it has a relevantly mild blue flavour but expect the IOW Blue to accelerate quickly so that by the time it is at the end of its Best Before date, the flavour will be a lot spikier than when it was young.
Being naturally rinded, it is covered in green, blue, grey and white moulds. These give the cheese bags of character and the variety of surface moulds that grow on the rind will make it stand out on any cheeseboard. The cheese has been a multiple medal winner at the World, British and International Cheese Awards, most notably winning Best English Cheese at The World Cheese Awards and Best Vegetarian Cheese at the 2019 Artisan Cheese Awards in Melton Mowbray.

From the first ladle milk from the local farm to the paper wrap and box packaging, every cheese is made by hand, using traditional methods and in French-style ‘bassines’, with expert skill and true passion.
Tunworth 250g
This cheese can be described as a very British, Camembert – a softy, white-rinded cheese wonderfully reminiscent of its French cousin. Tumworth is made markedly different thanks to the rounded green hills and lush glazing of its rural Hampshire terroir.
Despite being refined and perfected over the years Tunworth is still made entirely by hand – from the first ladle of pasteurised whole cows’ milk to the waxed paper wrap and popular box packaging.
The finished 250g cheese has a soft, thin and wrinkled rind, a rich and earthly mushroom fragrance, and a long-lasting sweet and nutty flavour. This cheese has won multiply awards, with recent awards including 2019 The Patrons Awards and the Specialist Cheesemakers Association presented by HRH The Prince of Wales – Best Artisan Cheese, the 2017 Great British Awards – Best Soft Cheese to name but a few ….
